Viognier
Our 2007 Viognier was barrel aged for 8 months in light French oak barrels, accentuating its smooth body and taste. It has the natural flavors of peach, honeysuckle, and pears running throughout, and emits a lovely floral bouquet. Our wine starts sweet, but finishes dry and crisp, making this white a great summer wine! With a medium body and higher acidity, our 2007 Viognier graciously complements a wide variety of meals such as pastas, poultry, seafood's, smoked salmon, and light grill. Our snack suggestions include: blue cheeses, Tourmalet cheese, or lemony feta with a light, crisp cracker. For meat options, we recommend a Seranno or Prosciutto, or even Genoa salami. Shellfish, like cocktail shrimp, go great with our Viognier, too.
Norton
Our 2007 Norton was whole cluster pressed, emphasizing the intense berry flavors this varietal offers. Also barrel aged for 10 months, it has retained excellent crispness along with a medium body. We serve our Norton chilled, which helps combat the "sweet-tart" after bite usually associated with the taste of the Norton grape. This wine can be paired with a wide variety of meals that are mild to moderate spicy such as pastas, poultry seafood and light grill. Many of our customers have told us that this wine goes great with any Barbeque dish, especially ribs! Our snack suggestions include: Camembert cheese, brie cheese, and all kinds of cheddar cheeses, with any type of mild or seasoned cracker. The Norton may also be served at room temperature, which strengthens the tannons.
Merlot
Our 2007 Merlot was barrel aged for 10 months, giving it a velvety, medium body with strong tannons and great legs. This wine exhibits a particularly deep blackberry/vanilla flavor and emits a rather smoky or peppery aroma. We have found that this red complements a wide variety of meals such as Chinese or Indian cuisine (the spicier the better!), fish, chicken, turkey and pork. Our snack suggestions include: brie cheeses, swiss and sharp blue cheeses with peppery or seasoned crackers. Hard salamis flavored with spices like herbs de provance or exotic spices also bring out the berry flavors of the wine.
Cabernet Sauvignon
Our 2007 Cabernet Sauvignon was barrel aged for 10 months, giving it a smooth and medium body. This red exhibits profound cherry and earthy flavors, with a peppery yet "plummy" aroma. Our Cabernet Sauvignon complements a wide variety of meals such as grilled roasted red meat, rare tuna, duck, lamb, roast chicken and wild game. We have rather special snack suggestions for our Cab Sauv, which include: dark chocolate (a customer favorite!), Camembert cheese, Gouda cheese, and Pecorino Toascana cheese with well-seasoned crackers. Hamburgers definitely go great with this wine as well as any hard salami or beef sausage.
